Grown-up Hot Cocoa!
Today, Lars and I decided it was time to stay in and make some treats for us. He recently read a recipe in the Times magazine for "Boozy hot cocoa for Grown-Ups". Of course, we were interested. I adapted the recipe ever so slightly, seeing as I didn't have things like a cappucino machine, and I couldn't get ahold of some of the types of liquor. I can't imagine what it probably tastes like with all the correct ingredients, because this cheaper version was amazing enough for us.
Hot Cocoa for Grown-ups, adapted from the Times
2 cups milk
10 oz. Semisweet cocoa - the Times suggests Debauve & Gallais 60% cocoa, we used Scharffen Berger 62%.
3 ox. Rum
3 oz. Coffee Liqueur (i.e. Kahlua, Caffe Lolita)
3/4 cup heavy cream
Scald milk in a saucepan over a medium-low flame. (Scalding is bringing milk to a boil until a film forms on the bottom. You'll feel it with your spoon.)
Add chocolate and whisk over medium-low heat until it has melted.
Scald rum and coffee liqueur in a separate saucepan
Stir all liquids together, divide among four glasses.
Whisk heavy cream vigorously for 1 minute - will be thick, but still liquid.
Pour slowly on top of glasses so it forms a second layer.
Drink and enjoy!
